homemade Almond Milk

so fresh! and to make the experience more enjoyable- our song of the day is:

now for ze recipe:

1 cup almonds 
3 cups of water plus a splash more
4 small dates
1/2 t vanilla extract
1/4 t cinnamon
a couple pinch's of sea salt


soak almonds overnight, drain, rinse and drain again.  Put almonds, water, dates, vanilla and cinnamon in a blender.  Best is vitamix but I guess I am just not baller enough for those so I have a ninja. ha.  It does the job.  blend on high for a good 3-4 minutes.  (you can usually tell visually) If there is froth at the top and it's looking like yummy milk your done.  I like to use a strainer over a large bowl and let the milk drip into the bowl.  I sometimes put a cheesecloth over the strainer to make the milk even more smooth AND if I am saving the almond meal, otherwise- chunky milk is great too (only in this instance is that true). 
once strained drained and maintained! your good to go!  put the milk in a jar or glass container and enjoy for the next 5-6 days!
