homemade peanut butter cups

say wha??!!! yes- I mean it, and these are so easy to make and such delicious treats!

yummy p-nut butter cups

super easy as I said.  depending on how many you want to make use about a cup of peanut butter and 3/4 c. of dark chocolate chips.

line a cupcake pan with cupcake liners- 

mix peanut butter with a bit of sugar or honey (if you like stevia that would work too), enough to satisfy the taste you are wanting. 

melt chocolate, I use a double boiler because you don't have to worry about the chocolate burning.  keep it over a low to medium heat. once melted - spoon a bit to the bottom of the cupcake liner, fill a small amount of peanut butter on top, flatten the pb a little so it's like a reese's, then top with the rest of the melted chocolate.  This should yield about 12-14 cups.  depending on how chunky you make these little treats.

pop in the freezer and enjoy shortly.  It doesn't take much time for them to form-  a half an episode of game of thrones length of time to set.

Feeling a little groggy so I though a nice moody blue would do well in easing me into the day.  Even though today it's been more ... thrusting me like a catapult but ehhh- to each his own.  In this case I think the song of the day would be
"I fell in love with a girl"  by the White Stripes!
You'll get some serious fist pumpin action in believe you me!


My kitten is not feeling so hot for a 3rd day!  I am worried and another trip to the vet will be unnecessary. So he has been upchucking all his food and water (not so much now- I am monitoring his food intake), and the first thing the vet said as she is pressing his belly - barely observing him- she is just focused on me and telling me how I should spend hundreds of dollars on x-rays and radiologist reads.  so that is the first thing she suggests- second, wait it out- if his gut is compromised well- you'll have to do surgery anyway or lose him.
I'm standing there drowning in my thoughts.  I have no money, and I don't want to lose my kitten.  No kitten blood on these hands!  ahhh!  but at the same time my cool calm collected part of the brain jumps in and says- look- this bitch is crazy.  she is just trying to make money if that is the first and only solution she came up with. When my other kitty Jude was young he got a little sick and I just had to syringe feed him with some medicine.  What was the stuff?  Why couldn't they give me any of that for Gremy?  Well- today I will know more, I brought them a stool sample and theyll have more info.  And boy oh boy was retrieving that sample a doozie.

Until my next rant... hopefully something productive can go on the board instead.

homemade Almond Milk

so fresh! and to make the experience more enjoyable- our song of the day is:

"Stuck in the middle with you" by the Stealers Wheel.  your welcome.

now for ze recipe:

1 cup almonds 

3 cups of water plus a splash more

4 small dates

1/2 t vanilla extract

1/4 t cinnamon

a couple pinch's of sea salt

soak almonds overnight, drain, rinse and drain again.  Put almonds, water, dates, vanilla and cinnamon in a blender.  Best is vitamix but I guess I am just not baller enough for those so I have a ninja. ha.  It does the job.  blend on high for a good 3-4 minutes.  (you can usually tell visually) If there is froth at the top and it's looking like yummy milk your done.  I like to use a strainer over a large bowl and let the milk drip into the bowl.  I sometimes put a cheesecloth over the strainer to make the milk even more smooth AND if I am saving the almond meal, otherwise- chunky milk is great too (only in this instance is that true). 

once strained drained and maintained! your good to go!  put the milk in a jar or glass container and enjoy for the next 5-6 days!

love is in the air...

"I can feel it every-where! la-di-di-dee-dahhhhh"

It has been a great year.  I have come to realize this as I practiced some self-shaming techniques and was complaining about where I thought I'd be in life... but then I realized- hey!  I am engaged! to the most incredible hansom man, he chose me!  and loves me so much he wants to spend our lives together!  crazy.  He actually took the time and patience over months to find the right ring and make it perfect.  antique beauty- 1910 champagne diamond- this ring is a one of a kind... I am in love twice over!

 And! I have a new kitten!  not by choice but what a blessing he has been.  2 manx's - both rare as hell- so cool. (ill post pics later).  I could expand on the music part of my life this year but I had a great acting year!  The short film I was in "IncognitA" won the "best feature" award at the SLO film festival!  Awesome.   And acting has been wonderful- I just finished my last month of class with a bang! but I am sad to leave the class- it is such a wonderful place to grow, share, and challenge yourself.  I never want to stop learning! but class is pricey so this baller on a budget's gotta start saving and countin' change.
