ze Apple Galette

cold weather...


tart granny smith apples...


and my first attempt at baking an apple galette.








              
                          




recipe:

4 apples: peeled, sliced 1/4 in. to 1/8 in. thick, and pitted.
4 T sugar divided
1 t. lemon zest 
1 T. flour

blend (but use only 2 T. of sugar) then mix with apples.
let apples sit in strainer while you get the dough ready.  lay out flat onto a greased baking sheet, cover the middle of the dough with cut dried apricots, then lay the apple slices neatly over the  dried fruit leaving about two inches around the rim.  
Fold the dough over the apples then brush the outer crust with milk and sprinkle the remaining 2 T. of sugar over the crust and apples.  I like the add cinnamon as well.

bake at 450 for 20 min. then reduce heat to 375 and bake for another 30 min.

Granola-ola yo mama

ingredients:
oats, light brown sugar, raw honey, flaxseed, pecans, sunflower seeds, vegetable oil, salt, cinnamon, dried fruit medley (apricots, pears, nectarines, apples, raisins).

preheat oven to 300.

4 c. oats
1/2 c. flaxseed
1 1/2 c. nuts of choice
1 c. seeds of choice
1/2 t. salt
1/2 t. cinnamon
1/4 c. raw honey
1/4 c. vegetable oil
1 t. vanilla extract
1 1/2 c. dried fruit of choice

bake 40 min. stirring every 10 min.
let granola cool then add dried fruit.


tip: it is extra yummy if you pour boiling water over the dried fruit and let sit for about 10 min.  This makes the fruit plump and more flavorful.

today is one of those days.  Lazy days. 











With blues playing in the back, matte latte in the front, grey sky's surround my cozy place like ninja's on a coke head's front lawn.  























What I meant was...

perfectly moist but not too sweet Chocolate Peanut-Butter Cupcakes.


 dark chocolate cupcakes with peanut-butter frosting.  garnished with sprinkles of toffee bits in every bite.





peanut butter frosting:

1/2 c. unsalted butter (softened)
1 c. unsweetened, creamy peanut-butter 
2 T heavy cream
1 T water
1-2 c. confectioner's sugar

note:  you could use milk instead of cream but I prefer cream.  If you are using milk,  use 3 T of milk instead of water and cream. 


dark chocolate cake:

2 c. sugar
1-3/4 c. all-purpose flour
3/4 cup DARK Cocoa 
1-1/2 t. baking powder
1-1/2 t. baking soda
1 t. salt
2 eggs
1 c. milk
1/2 c. vegetable oil
2 t. vanilla extract
1 c. boiling water

1. Heat oven to 350°F. Grease and flour two 9-inch round pans or one 13x9x2-inch baking pan. 

2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat until well blended. Stir in boiling water (batter will be thin). Pour batter into prepared pans. 

3. Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan, 15-20 minutes for cupcakes, or until wooden pick inserted in the center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

note: hershey's special dark cocoa is the best.

Pa came for a day.


Pa stopped by to say hi.  Drove through on some family bizz-nas and was trying to let me know but turned out he was texting my old number which now belongs to some chick name Myla-hee with a bad attitude.  oh well.  It was great to see him for a day.  Miss my ma and pa!
